During the rainy days of autumn you probably can use some comfort food. It is easy to order a pizza of grab for high-calorie food, such as chocolate and chips. But there is also healthy comfort food. Choosing for healthy food is important, because healthy food has an effect on your mental health. In previous blogs we already described how nutrition can determines how you feel and we described the relation between mental health problems and unhealthy food.

Now it is autumn and seasonal vegetables, like broccoli, leek, salsify, celeriac and pumpkin are fully available. To help you on your way, we share this recipe for a heart-warming pumpkin soup. 

Pumpkin soup with curry, chili and coriander 

Preparation time: 15-30 minutes
For 2 people

Ingredients

  • 500 grams of pumpkin
  • 1 onion
  • 2 teaspoons of curry powder
  • 2 tablespoons of liquid margarine
  • ¼ vegetable bouillon tablet
  • 1 dried chili pepper
  • 1 thin leek
  • cinnamon
  • 4 sprigs of cilantro (or celery)
  • 4 tablespoons of semi-skimmed yogurt

Preparation

  1. Wash the pumpkin, remove the threads and seeds and dice the unpeeled pumpkin.
  2. Peel and chop the onion finely. Cook the onion in a large soup pan with the curry powder in the margarine.
  3. Add the pumpkin with 400 ml of water and the piece of bouillon tablet.
  4. Crumble the chili pepper and add it. Bring the soup to boil and let the soup cook for 20 minutes.
  5. Puree the soup with a hand blender or in the food processor.
  6. Clean the leek and cut into thin rings.
  7. Bring the soup back to boil and add the leek. Cook the soup for a few minutes.
  8. Season the soup with some cinnamon.
  9. Wash the coriander (or celery) and finely cut the leaves. Mix it with the yogurt.
  10. Serve the soup with the yoghurt sauce.
